Dexters being a small breed produce small but perfectly formed joints. This is a Picanha which sits above the fillet. It’s a triangular piece in the Dexters comes it at just 600-700 grams. Popular in South America especially Brazil, little seen in the UK but your butcher will prepare for you if you ask for by the British name of the the Rump Cap.
