I’ve had a few messages from people asking for more info on Dexters and why the beef is highly prized. Here’s a couple of reasons important to me. These are some of our cattle, this shows you the size of them quite clearly. About a metre tall plus or minus 5-10 Cm at the tail fully grown. As they are perfectly proportioned the fibres of the meat are also 50% of the size of standard animals. The consequence of this is two fold. The tenderness of Dexter beef vs other commercial is really pronounced and they have greater flavour. The second aspect is in my opinion and one I’ve also heard from several other sources is that as the meat fibres are denser you need less in a portion. Which is what we tried to sum up with our slogan “Heritage beef from mighty little beasts.” This is a few of the reasons we chose to keep Dexters. Another important reason is somewhat contentious but appears to be true in that Dexters are the only breed in the UK that never caught BSE.
