This is off a steer sourced from@us by @heritagemeatshk the beta carotene he mentions is the chemical which turns the fat yellow. Can only be produced by the animals eating grass. Ours are 100% grass (or silage) 100% of the time which give it this lovely colour. By contrast grain fed animals have white fat. Typically all supermarket meat will be white. Also grass fed animals are naturally high in omega 3 as opposed to grain fed animals which have omega 6 like cakes (from the grain). So beta carotene in the fat is a good marker of beef which has this healthy fat in.
