Pleased to announce we have been awarded a 2 star for our traditional Tamworth pork Cumberland Sausage. Our pork was also featured on @cheftomkerridge Hospitality program with @ryan_stamphouse last week.

A pleasant savoury smell comes from this meaty sausage, the texture is good, moist and juicy and there is a good snap on the casing. In the mouth there is a deep porky savouriness with enough rich fat to give it an enjoyable mouthfeel and the spicing is very well-judged, with a hint of black pepper heat on the finish. An excellent sausage for breakfast, or any other time.


Attractively presented, this Cumberland sausage look appetising and has a rich porky aroma. The sausage has a coarse texture and a pleasant mouth-feel. The taste of the sausage is delicious, with the balanced flavour of the herbs and spices really coming through. The quality of the meat is excellent with no gristle at all. The judges felt this was exceptional.


This sausage has an inviting peppery-herby-porky aroma. This continues through to the palate, with the peppery spices coming to the fore. The judges appreciated the meatiness of these sausages, though did wonder whether the salt was a little too high, overwhelming the finish.


This is a generous sausage with a beautiful caramelisation. The mouthfeel is chewy and juicy with the herbs and spices racing in to dance with the pork. This is ever so slightly high on the salt content but only just.
